Abstract

The objective of this work is to group one density database of pulp fruits scattered in severalbibliographical documentation, classifying them by method used, temperature range, concentration,equations, error, besides other information. After compiling database it was found lack of informationof some national varieties of fruits which motivated the experimental determination of density bythe Picnometric method of the following fruits pulp: passion fruit, tangerine cv. Ponkã, guanabana,cashew fruit and west Indian cherry. The experimental values at the temperature of 30°C variedbetween 1.038 kg m-3 for west Indian cherry to 1.076 kg m-3 for guanabana at a range of 10º to 18ºBrix respectively, showing that exists a tendency to the increase of density values in function ofthe soluble solids content. An equation was obtained to calculate the density in function of solublesolids content for pulp fruits between 10 to 18° Brix with the correlation coefficient of 0,91. Themodels to predict the density found in literature had supplied good adjustments in relation toexperimental values with maximum percentage errors between 1,7 %.
